Ingredients
- 1 small eggplant
- olive oil
- 2 cloves garlic
- 3 c. tomato sauce
- your favorite pasta
Method
- Thinly slice and fry eggplant in olive oil, a few slices at a time.
- Place slices on paper towel to dry.
- In the same oil, saute garlic and then add tomato sauce.
- Simmer for a few minutes and then add the eggplant.
- Pour sauce on pasta, sprinkle with Parmesan and serve.
