- 1/2 lb. bulk pork sausage
- 1/2 c. chopped bell pepper
- 2/3 c. chopped onion
- 1 (14 1/2 oz.) can Italian style tomatoes (with basil, oregano, & garlic)
- 1 (14 oz.) jar pizza sauce
- 2 c. water
- 1/3 c. sliced black olives
- 1 (2 1/2 oz.) jar sliced mushrooms, drained
- 1 c. cooked white rice
- 1/2 c. finely shredded Pizza cheese (Mozzarella & Cheddar)
- Additional pizza cheese for garnish, if desired
Method
- Combine sausage, bell pepper, and onion in soup pot.
- Cook over medium heat for 5 minutes or until sausage is fully cooked and vegetables are tender.
- Add remaining ingredients except for garnish.
- Cook over low heat for 10 to 15 minutes.
- Sprinkle additional cheese over top of each serving.
- Makes about 8 servings.
