Ingredients

  • 1/2 lb. bulk pork sausage
  • 1/2 c. chopped bell pepper
  • 2/3 c. chopped onion
  • 1 (14 1/2 oz.) can Italian style tomatoes (with basil, oregano, & garlic)
  • 1 (14 oz.) jar pizza sauce
  • 2 c. water
  • 1/3 c. sliced black olives
  • 1 (2 1/2 oz.) jar sliced mushrooms, drained
  • 1 c. cooked white rice
  • 1/2 c. finely shredded Pizza cheese (Mozzarella & Cheddar)
  • Additional pizza cheese for garnish, if desired

Method

  • Combine sausage, bell pepper, and onion in soup pot.
  • Cook over medium heat for 5 minutes or until sausage is fully cooked and vegetables are tender.
  • Add remaining ingredients except for garnish.
  • Cook over low heat for 10 to 15 minutes.
  • Sprinkle additional cheese over top of each serving.
  • Makes about 8 servings.
