Ingredients

  • 4 large potatoes scrubbed
  • 3 tomatoes quartered
  • 4 slices salami cut into strips
  • 12 black olives
  • 8 ounces mozzarella cheese sliced
  • 2 tablespoons olive oil
  • salad to serve

Method

  • Preheat the oven to 400°F. Prick the potatoes all over with a fork. Place on a lightly greased baking pan. Bake for 1-1 1/4 hours until the potatoes are soft when gently squeezed or when a skewer can be inserted easily into the center.
  • Carefully cut through the middle of each potato, without cutting all the way through. Open potatoes up. Place on a foil-lined baking pan. Fill with the tomato wedges, strips of salami and black olives. Place the cheese slices on top. Drizzle with the olive oil.
  • Cook under a preheated broiler for 5-6 mins until the cheese is melted and browned. Serve hot with a simple salad.
