Ingredients

  • 1 lb. ground beef
  • 1/2 c. long grain white rice
  • 3/4 c. finely chopped onion
  • 1 garlic clove, finely chopped
  • 1/2 tsp. dried basil leaves
  • 1/2 tsp. salt
  • 1/4 tsp. ground black pepper
  • 1 (10 3/4 oz.) can condensed tomato soup
  • 1/2 c. water

Method

  • In medium size bowl, combine ground beef, rice, onion, garlic, basil, salt and pepper.
  • Form into 1 1/2-inch balls.
  • In a 4-quart pressure cooker pan, combine soup and water.
  • Heat to boiling over medium-high heat.
  • Add meatballs to soup mixture.
  • Cover and heat to 15 pounds pressure.
  • Cook meatballs 10 minutes.
  • Remove from heat and allow pressure to reduce gradually.
  • When pressure is completely reduced, remove lid and serve meatballs immediately.
