Ingredients
- 100 g butter
- 2 cloves garlic, crushed
- 1 small green chilli, seeded and chopped
- 750 g raw prawns, peeled and deveined
- 1 teaspoon finely grated lime zest
- 1 tablespoon lime juice
- 2 tablespoons whole-egg mayonnaise
- 2 tablespoons chopped fresh coriander Tabasco sauce, to taste (optional)
Method
1. Melt the butter in a large frying pan and add the garlic, chilli and prawns. Cook over medium heat for 20 minutes, or until tender.
2. Place the prawn mixture into a food processor, add the lime zest and juice and process until roughly chopped. Stir through the mayonnaise and coriander and season with Tabasco sauce, salt and pepper. Spoon into a serving dish.
3. Chill for at least 1 hour or until firm. Allow the pâté to return to room temperature before serving.
