Ingredients
- 1 c. evaporated milk
- 1/2 c. water
- 3 eggs
- 1 1/2 c. pumpkin (can use fresh or canned)
- 1/2 c. granulated sugar
- 1/2 c. firmly packed brown sugar
- 1 1/2 tsp. pumpkin pie spice
- 1 tsp. salt
Method
- Scald evaporated milk with water.
- Beat eggs slightly in large bowl.
- Stir in pumpkin, sugar, spice and salt.
- Beat in scalded milk mixture.
- Pour in pastry shell.
- Bake 50 minutes at 350° or until center is set, but still soft.
- Top with whipped cream or ice cream.
