Ingredients

  • 1/2 c. oat bran
  • 1/2 c. whole wheat flour
  • 1/2 c. oatmeal (quick cooking)
  • 1/2 c. white flour
  • 1/2 c. sugar
  • 2 tsp. baking powder
  • 1 tsp. pumpkin pie spice
  • 1/2 tsp. salt (optional)
  • 1/4 tsp. soda
  • 1 egg
  • 1/4 c. oil or 1/4 c. applesauce for oil-free
  • 1/2 can pumpkin
  • 1 c. skim milk

Method

  • Combine dry ingredients in large bowl.
  • Combine remaining ingredients and add to dry ingredients, stirring only to moisten. Spray 12 muffin cups with vegetable cooking spray and fill evenly. Bake 20 minutes in a 425° oven.
