Ingredients
- 5 medium potatoes, peeled and diced
- 1/2 c. onion, diced
- 1/2 c. celery, diced
- 1/4 c. cherry peppers, diced
- 8 oz. whole kernel corn, drained
- 1/4 c. oil
- 3 Tbsp. picante sauce (add last)
Method
- Cook in cast-iron skillet, uncovered, until tender, stirring often.
- Add picante sauce and simmer 5 minutes; serve hot.
