Ingredients
- 3 c. rhubarb
- 1 Tbsp. sugar or sugar substitute
- 1 small box raspberry Jell-O (sugar-free)
- 1 c. unsweetened pineapple juice
- 1 tsp. lemon juice
- 1 c. diced apples
- 1 c. diced celery
- 1 c. chopped walnuts
Method
- Heat rhubarb with sugar until soft.
- Add Jell-O and stir.
- Add pineapple juice and lemon juice. Refrigerate until partially set. Add the rest of the ingredients and refrigerate again until completely set.
