Ingredients
- 2-3 tomatoes roughly diced
- 2different coloured capiscum
- 1 300g can coconut cream
- 2 med red onions finely diced
- 2 lg skinless and boneless white fillet fish like snapper
- lemon juice
- salt n' pepper
Method
- 1. cut your fish into chunky cubes, place in a plastic container,season and squeeze two lemons over it, cover and place in fridge for 30mins or more
- 2.add your tomatoes, capiscum
- and onions to fish.
- 3. add coconut cream and combine, place back in the fridge for 30 mins
