Ingredients

  • 2-3 tomatoes roughly diced
  • 2different coloured capiscum
  • 1 300g can coconut cream
  • 2 med red onions finely diced
  • 2 lg skinless and boneless white fillet fish like snapper
  • lemon juice
  • salt n' pepper

Method

  • 1. cut your fish into chunky cubes, place in a plastic container,season and squeeze two lemons over it, cover and place in fridge for 30mins or more
  • 2.add your tomatoes, capiscum
  • and onions to fish.
  • 3. add coconut cream and combine, place back in the fridge for 30 mins
