Ingredients
- 3 c. vanilla wafer crumbs
- 1 1/2 c. powdered sugar
- 1/2 c. butter
- 2 eggs, well beaten
- 1 c. cream, whipped
- 3/4 c. pecans, chopped
- 1 c. crushed pineapple, drained
Method
- Add beaten eggs to well creamed butter and sugar.
- Beat until fluffy.
- Place in bottom of pan a layer of vanilla wafer crumbs and pat firmly.
- Add the creamed mixture, pineapple, whipped cream and nuts.
- Add the remaining wafer crumbs.
- Refrigerate overnight. Serve with whipped cream and top with a cherry.
