Ingredients
- 1 3/4 c. sugar, divided
- 1 c. flour
- 3 Tbsp. butter or margarine
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1/2 c. milk
- 3 to 4 c. rhubarb, cut into 1/2-inch pieces
- 1 Tbsp. cornstarch
- 2 tsp. cinnamon
- 1 c. hot water
Method
- Put rhubarb in an 11 x 7 or 9 x 9 baking dish. Mix 3/4 cup sugar, flour, butter, baking powder, salt and milk. Spoon this mixture over the rhubarb. Mix 1 cup sugar, cornstarch and cinnamon; sprinkle over dough. Pour hot water over all. Bake at 350° for 1 hour. Serve with ice cream or whipped cream.
