Ingredients

  • 1 3/4 c. sugar, divided
  • 1 c. flour
  • 3 Tbsp. butter or margarine
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 c. milk
  • 3 to 4 c. rhubarb, cut into 1/2-inch pieces
  • 1 Tbsp. cornstarch
  • 2 tsp. cinnamon
  • 1 c. hot water

Method

  • Put rhubarb in an 11 x 7 or 9 x 9 baking dish. Mix 3/4 cup sugar, flour, butter, baking powder, salt and milk. Spoon this mixture over the rhubarb. Mix 1 cup sugar, cornstarch and cinnamon; sprinkle over dough. Pour hot water over all. Bake at 350° for 1 hour. Serve with ice cream or whipped cream.
