- 1 c. dried red kidney beans or pigeon peas
- 2 c. Uncle Ben's brown rice
- coconut milk (optional)
- 4 cloves garlic
- 1 medium onion
- 8 Tbsp. olive oil
- 1 oz. margarine (soy bean)
- 1/2 tsp. cayenne pepper
- 1 tsp. salt
- 1 tsp. thyme (optional)
- 2 stalks scallion (optional)
Method
- Thoroughly cook beans plus 4 tablespoons olive oil, 1/2 ounce margarine, garlic, onion, cayenne pepper, salt, thyme and scallion in 6 cups water.
- This will take approximately 2 hours to cook. If water gets low, add a little more.
