Ingredients

  • 1 c. dried red kidney beans or pigeon peas
  • 2 c. Uncle Ben's brown rice
  • coconut milk (optional)
  • 4 cloves garlic
  • 1 medium onion
  • 8 Tbsp. olive oil
  • 1 oz. margarine (soy bean)
  • 1/2 tsp. cayenne pepper
  • 1 tsp. salt
  • 1 tsp. thyme (optional)
  • 2 stalks scallion (optional)

Method

  • Thoroughly cook beans plus 4 tablespoons olive oil, 1/2 ounce margarine, garlic, onion, cayenne pepper, salt, thyme and scallion in 6 cups water.
  • This will take approximately 2 hours to cook. If water gets low, add a little more.
