Ingredients
- 1 Pikes Peak roast
- 3 large onions (purple is best)
- 10 boiled eggs
- 1 pt. sweet pickles
- 3 jalapeno peppers (optional)
- 1 1/2 qt. mayonnaise or salad dressing
Method
- Cook roast.
- Grind roast, onions, eggs, pickles and peppers. Add mayonnaise to spreading consistency.
- Keeps up to 2 weeks in refrigerator.
- Serves 50.
