Ingredients

  • 4 medium fillets of salmon,
  • 8 handfuls of fresh baby spinach,
  • 2 cucumbers julienned,
  • 1/2 cup dried cranberries or cherries,
  • 1 chopped parsnip,
  • 1/2 cup julienned carrots,
  • Chateau St. Michelle Pinot Grigio,
  • Fresh minced garlic,
  • 1 quartered lemon,
  • heavy cream,
  • fresh parsley and thyme
  • Special Item: parchment paper

Method

  • Fold the parchement paper like a cream cheese wrapper, rolling up the sides but keeping the top open.
  • Place a salmon filet in each wrapper. Mix the vegetables and divide into each wrapper. Sprinkle each with a bit of fresh minced garlic and the juice of a quartered lemon. Top it with a dash of wine and herbs. sprinkle just a tiny bit of cream.
  • Seal the top of the package and bake at 400 degrees until fish is cooked through, about 20 minutes in electric oven.
