Ingredients

  • 4 (4 to 6 oz.) salmon fillets
  • 1/8 tsp. salt
  • 1/8 tsp. black pepper
  • 2 Tbsp. Dijon mustard
  • 2 Tbsp. butter margarine melted
  • 1 1/2 Tbsp. honey
  • 1/4 c. soft bread crumbs
  • 1/4 c. finely chopped pecans
  • 2 tsp. chopped fresh parsley
  • Fresh parsley sprigs and lemon slices for garnish

Method

  • Preheat oven to 450°.
  • Season salmon with salt and pepper. Place fillets, skin-side down, in a lightly greased 9x13 inch pan. Combine mustard, butter and honey and brush over fillets.
  • Mix bread crumbs, pecans and parsley.
  • Spoon mixture evenly over fillets.
  • Bake 10 minutes or until fish flakes easily when tested with a fork.
  • Garnish with parsley and lemon slices.
