Ingredients

  • 1/4 c. butter
  • 2 Tbsp. flour
  • 2 c. water
  • 2 c. cut okra
  • 2 c. cubed tomatoes
  • 1 large onion
  • 1 small green pepper, chopped
  • 1 tsp. pepper sauce
  • 1/8 tsp. thyme
  • 1 bay leaf
  • 2 c. shrimp, crab meat and oysters
  • 3 c. hot cooked rice

Method

  • Melt butter.
  • Blend in flour; cook over low heat, stirring, until dark brown.
  • Add liquid, okra, tomatoes, onion, pepper sauce, thyme and bay leaf.
  • Bring to boil.
  • Cover; simmer for 30 minutes.
  • Add seafood; cook for 10 to 15 minutes.
  • Remove bay leaf.
  • Serve over hot rice.
