Ingredients

  • 1 lb. Crab meat
  • 1 lb. fresh shrimp
  • 1 lb. fresh firm white fish cubed
  • 1 cup chopped onions
  • 16 oz. tomatoes pureed
  • 1 lb. okra cut in chunks
  • 3 tablespoons olive oil
  • 3 or 4 cloves of garlic crushed
  • 3 tablespoons flour (all purpose)
  • 2 or 3 bay leaves
  • 2 tablespoons fresh oregano
  • 1 tablespoon fresh thyme
  • add salt,black pepper, and crushed red pepper to taste
  • 2 cups chicken broth

Method

  • saute onions and garlic in olive oil until tender, blend in flour with whisk until golden brown. Stir in 2 cups chicken broth,tomatoes,oregano,thyme,bayleaves,salt,and peppers, bring to boil, then simmer for 1 hour. Remove bay leaves add okra, simmer for 30 minutes or until fork tender. Gently stir in crab, shrimp, and cubed fish. Simmer for another 5 minutes. Can be served over rice, but can stand alone as a stew.
