Ingredients

  • 12 cup butter
  • 1 14 cups sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1 (15 ounce) can pumpkin
  • 1 egg
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1 (10 ounce) package butterscotch chips

Method

  • In a large mixing bowl, beat butter with an electric mixer on medium to high speed for 30 seconds.
  • Add the sugar, baking powder, baking soda, cinnamon and salt; beat until well combined.
  • Beat in the pumpkin, egg and vanilla.
  • Beat in as much flour as you can with the mixer.
  • Stir in any remaining flour with a wooden spoon.
  • Stir in butterscotch pieces.
  • Drop by rounded teaspoons onto an ungreased cookie sheet.
  • Bake in a 375 oven for 8 - 10 minutes or until edges are lightly browned.
  • Remove cookies and cool completely on a wire rack.
  • Makes 60 cookies.
