Ingredients

  • 1 lb. fresh spinach
  • 3/8 tsp. pepper
  • 2 c. lettuce, shredded
  • 1 1/2 c. black olives
  • 6 strips bacon
  • 1/2 c. shredded Swiss cheese
  • 1/2 c. onion (green)
  • 1/2 tsp. salt
  • 2 Tbsp. sugar
  • 3 hard-boiled eggs
  • 1 (10 oz.) pkg. frozen peas
  • 1/2 c. red onions
  • 1/2 c. mayonnaise

Method

  • Boil peas 5 minutes.
  • Arrange spinach in a deep glass bowl. Sprinkle with salt, pepper and sugar.
  • Add layers of lettuce, sliced eggs and olives.
  • Sprinkle with salt, pepper and sugar. Add layers of peas and bacon (drained and crumbled).
  • Top with mayonnaise to seal.
  • Sprinkle with cheese.
  • Cover and refrigerate overnight.
  • Toss before serving.
