- 1 lb. fresh spinach
- 3/8 tsp. pepper
- 2 c. lettuce, shredded
- 1 1/2 c. black olives
- 6 strips bacon
- 1/2 c. shredded Swiss cheese
- 1/2 c. onion (green)
- 1/2 tsp. salt
- 2 Tbsp. sugar
- 3 hard-boiled eggs
- 1 (10 oz.) pkg. frozen peas
- 1/2 c. red onions
- 1/2 c. mayonnaise
Method
- Boil peas 5 minutes.
- Arrange spinach in a deep glass bowl. Sprinkle with salt, pepper and sugar.
- Add layers of lettuce, sliced eggs and olives.
- Sprinkle with salt, pepper and sugar. Add layers of peas and bacon (drained and crumbled).
- Top with mayonnaise to seal.
- Sprinkle with cheese.
- Cover and refrigerate overnight.
- Toss before serving.
