Ingredients

  • 13 c. light mayonnaise
  • 1/2 tsp. Cajun seasoning
  • 4 rolls
  • 1/2 small head iceberg lettuce
  • 2 medium tomatoes
  • 2 large takeout orders popcorn shrimp (about 1 pound)
  • 1 c. sliced dill pickles

Method

  • In small bowl, stir together mayonnaise and Cajun seasoning until blended.
  • Cut each roll horizontally almost in half, leaving attached at 1 end.
  • Scoop out about 1/2 inch soft bread from center of bottom halves.
  • Place rolls on serving plate.
  • Spread mayo mixture on cut sides of top halves.
  • Arrange lettuce, tomatoes, shrimp, and pickles, if using, on bottom halves.
