Ingredients

  • 1/4 c. olive or canola oil
  • 1/2 c. chopped onion
  • 1 tsp. chopped garlic
  • 1 tsp. chopped parsley
  • 1 tsp. chopped celery
  • 1 1/2 c. water
  • 1 can tomatoes
  • 1 can tomato sauce
  • 1/2 c. sherry wine
  • 1 tsp. black pepper
  • 1 tsp. salt
  • 1/2 tsp. paprika
  • 1 lb. shrimp
  • 1 lb. spaghetti

Method

  • Saute onion, celery, garlic and parsley in oil until golden brown.
  • Add tomatoes, tomato sauce, water and seasonings.
  • Simmer for one hour.
  • Add shrimp and wine and simmer 15 or 20 minutes. Cook spaghetti.
  • Drain water and put sauce over spaghetti. Sprinkle with grated cheese (optional).
  • Yields 6 servings.
