- 1/4 c. olive or canola oil
- 1/2 c. chopped onion
- 1 tsp. chopped garlic
- 1 tsp. chopped parsley
- 1 tsp. chopped celery
- 1 1/2 c. water
- 1 can tomatoes
- 1 can tomato sauce
- 1/2 c. sherry wine
- 1 tsp. black pepper
- 1 tsp. salt
- 1/2 tsp. paprika
- 1 lb. shrimp
- 1 lb. spaghetti
Method
- Saute onion, celery, garlic and parsley in oil until golden brown.
- Add tomatoes, tomato sauce, water and seasonings.
- Simmer for one hour.
- Add shrimp and wine and simmer 15 or 20 minutes. Cook spaghetti.
- Drain water and put sauce over spaghetti. Sprinkle with grated cheese (optional).
- Yields 6 servings.
