Ingredients

  • 1 large Angel Food Cake
  • 2 Tbsp. gelatin
  • 4 Tbsp. cold water
  • 1 cup sugar
  • 1 cup boiling water
  • juice of 1 lemon
  • 1 cup strained orange juice
  • 2 half pint whipping cream

Method

  • Soak gelatine in cold water. Add boiling water to dissolve. Add orange and lemon juice. Add sugar and mix well. Chill until partly jelled. Whip 1/2 pint cream until stiff. Add 1 tsp. sugar to whipped cream. Mix whipped cream with partially jelled gelatin. Break up angel food cake until bite sized pieces. Line large mixing bowl with waxed paper. Put a layer of cake and layer of gelatin mixture. Add layer of each until all used up. Let set in refrigerator until jelled. Unmold on cake plate. Whip 2nd 1/2 pint cream until stiff adding 1 tsp sugar spread on cake. Sprinkle with coconut.
