- 1 lb. (2 large or 4 medium) ripe tomatoes, cut into 1/2-inch dice
- 1/4 c. slivered fresh basil leaves
- 4 scallions, thinly sliced
- 2 Tbsp. olive oil
- 1/2 tsp. grated lemon zest
- 1 Tbsp. lemon juice
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/2 c. yellow peppers, diced
- 1/2 tsp. garlic powder (optional)
- spaghetti
- grated Parmesan cheese
Method
- Combine ingredients in large bowl. Marinate at room temperature 30 minutes.
- Cook pasta.
- Add tomatoes.
- Toss and serve with grated Parmesan cheese.
- Serves 2 as a main dish or 4 as a side dish.
