Ingredients

  • 1 lb. (2 large or 4 medium) ripe tomatoes, cut into 1/2-inch dice
  • 1/4 c. slivered fresh basil leaves
  • 4 scallions, thinly sliced
  • 2 Tbsp. olive oil
  • 1/2 tsp. grated lemon zest
  • 1 Tbsp. lemon juice
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 c. yellow peppers, diced
  • 1/2 tsp. garlic powder (optional)
  • spaghetti
  • grated Parmesan cheese

Method

  • Combine ingredients in large bowl. Marinate at room temperature 30 minutes.
  • Cook pasta.
  • Add tomatoes.
  • Toss and serve with grated Parmesan cheese.
  • Serves 2 as a main dish or 4 as a side dish.
