Ingredients

  • 1 fat hen, cut into pieces
  • salt to taste
  • flour
  • cooking oil
  • 1 large onion, finely chopped
  • 1 clove garlic, grated
  • bacon drippings
  • 1 qt. tomatoes, strained
  • 1 can tomato paste
  • 1 Tbsp. chili powder
  • 1 bell pepper, chopped
  • 1 c. corn meal
  • 1 can cream-style corn

Method

  • Season and flour chicken pieces; place in skillet and brown in hot oil until golden. Cover with water and boil gently until tender. Saute onion and garlic in bacon drippings; add to chicken with remaining ingredients, except corn meal and corn. Mix thoroughly. Add a small amount of water to corn meal, stirring until smooth. Add to chicken mixture and boil until thickened. Pour into a baking dish; top with creamed corn and bake in a 350° oven until brown. Makes 10 servings.
