Ingredients
- 1 medium eggplant
- 1 egg, beaten
- 1 1/2 c. tomatoes (canned)
- 2 Tbsp. melted butter
- 1 c. bread crumbs
- 1/2 c. buttered bread crumbs
- 1 small onion, chopped
- 1/2 c. grated cheese
Method
- Heat oven to 375°.
- Cut eggplant in cubes.
- Boil 8 minutes in salted water.
- Drain.
- As you add the tomatoes and egg, also add the onion, bread crumbs and butter.
- Place in 1 1/2-quart casserole dish.
- Top with buttered bread crumbs and grated cheese.
