Ingredients
- 1/2 c. finely cut bacon (6 slices)
- 1 large onion
- 1 bell pepper
- 1 c. uncooked rice
- 1 c. tomatoes
- 1 tsp. salt
- 1/2 tsp. chili powder
- 3 c. water
Method
- Fry bacon until crisp.
- Chop onion and green pepper fine. Drain grease.
- Save 2 tablespoons fat.
- Saute onion and pepper and rice until golden brown, then add bacon.
- Continue cooking for 5 minutes.
- Cover and simmer for 15 minutes.
- Place in casserole dish and bake 30 minutes.
