- 2 tbsp. vegetable oil
- 1 fresh tuna steak
- 1/4 tsp. salt
- 1/4 tsp. Pepper
- 1/4 c. light mayonnaise
- 1 tbsp. Asian hot chili sauce
- 1 tbsp. fresh lime juice
- 1 tbsp. soy sauce
- 1 tbsp. toasted sesame oil
- 1 pinch sugar
- 6 c. arugula
- 2 c. cooked brown rice
- 1 seedless (English) cucumber
- 1 avocado
Method
- If using fresh tuna, in 10-inch skillet, heat vegetable oil on medium-high until very hot.
- Sprinkle tuna all over with salt and pepper.
- Add tuna to skillet; cook 3 minutes per side or until browned on both sides.
- Transfer cooked tuna to cutting board.
- Thinly slice.
- In large bowl, whisk together mayonnaise, chili sauce, lime juice, soy sauce, sesame oil, and sugar.
- Add arugula, rice, cucumber, and avocado; toss to combine.
- Divide salad among 4 serving plates.
- Top with tuna.
