Ingredients

  • 2 tbsp. vegetable oil
  • 1 fresh tuna steak
  • 1/4 tsp. salt
  • 1/4 tsp. Pepper
  • 1/4 c. light mayonnaise
  • 1 tbsp. Asian hot chili sauce
  • 1 tbsp. fresh lime juice
  • 1 tbsp. soy sauce
  • 1 tbsp. toasted sesame oil
  • 1 pinch sugar
  • 6 c. arugula
  • 2 c. cooked brown rice
  • 1 seedless (English) cucumber
  • 1 avocado

Method

  • If using fresh tuna, in 10-inch skillet, heat vegetable oil on medium-high until very hot.
  • Sprinkle tuna all over with salt and pepper.
  • Add tuna to skillet; cook 3 minutes per side or until browned on both sides.
  • Transfer cooked tuna to cutting board.
  • Thinly slice.
  • In large bowl, whisk together mayonnaise, chili sauce, lime juice, soy sauce, sesame oil, and sugar.
  • Add arugula, rice, cucumber, and avocado; toss to combine.
  • Divide salad among 4 serving plates.
  • Top with tuna.
