Ingredients

  • 2 (10 oz.) pkg. frozen chopped spinach, cooked according to pkg. directions
  • 3 c. herb seasoned stuffing mix
  • 1 large onion, finely chopped
  • 6 eggs, well beaten
  • 3/4 c. melted margarine
  • 1/2 c. grated Parmesan cheese
  • 1/2 tsp. pepper
  • 1 1/2 tsp. garlic salt
  • 1/2 tsp. thyme

Method

  • Drain spinach well; squeeze to remove excess moisture.
  • Combine spinach with remaining ingredients.
  • Shape into 3/4-inch balls; place on lightly greased cookie sheets.
  • (These can be made ahead and frozen, then baked.)
  • They taste like sausage.
  • Bake at 325° for 15 to 20 minutes.
