Ingredients
- 2 (10 oz.) pkg. frozen chopped spinach, cooked according to pkg. directions
- 3 c. herb seasoned stuffing mix
- 1 large onion, finely chopped
- 6 eggs, well beaten
- 3/4 c. melted margarine
- 1/2 c. grated Parmesan cheese
- 1/2 tsp. pepper
- 1 1/2 tsp. garlic salt
- 1/2 tsp. thyme
Method
- Drain spinach well; squeeze to remove excess moisture.
- Combine spinach with remaining ingredients.
- Shape into 3/4-inch balls; place on lightly greased cookie sheets.
- (These can be made ahead and frozen, then baked.)
- They taste like sausage.
- Bake at 325° for 15 to 20 minutes.
