Ingredients
- 2 lb. yellow squash
- 1 stick margarine
- 1 can cream of chicken soup
- 1 small onion, minced
- 1 small carrot, grated
- 1/2 pt. sour cream plus 1/2 c. milk
- 1 (8 oz.) pkg. Pepperidge Farm stuffing mix
Method
- Cook squash, onion and carrots; then drain.
- Combine soup and milk mixture with sour cream.
- Fold in drained squash, onion and carrots.
- Combine stuffing mix and melted margarine.
- Spread 1/2 of stuffing mixture in a 13 x 9-inch baking dish; then spoon squash mixture over this.
- Sprinkle remaining stuffing mixture over this.
- Bake at 350° for 30 minutes.
