Ingredients

  • 2 lb. yellow squash
  • 1 stick margarine
  • 1 can cream of chicken soup
  • 1 small onion, minced
  • 1 small carrot, grated
  • 1/2 pt. sour cream plus 1/2 c. milk
  • 1 (8 oz.) pkg. Pepperidge Farm stuffing mix

Method

  • Cook squash, onion and carrots; then drain.
  • Combine soup and milk mixture with sour cream.
  • Fold in drained squash, onion and carrots.
  • Combine stuffing mix and melted margarine.
  • Spread 1/2 of stuffing mixture in a 13 x 9-inch baking dish; then spoon squash mixture over this.
  • Sprinkle remaining stuffing mixture over this.
  • Bake at 350° for 30 minutes.
