Ingredients
- 1 (3 oz.) pkg. strawberry gelatin
- 1 (20 oz.) can crushed pineapple
- 1 (24 oz.) container small curd cottage cheese
- 1/2 pt. whipping cream
- 20 maraschino cherries, halved
Method
- In medium saucepan, combine gelatin and pineapple with juice. Heat until all gelatin is dissolved.
- Set aside.
- In a large bowl, whip whipping cream with mixer about 2 minutes.
- Fold in cottage cheese, cherries and gelatin mixture.
- Place in an 8-inch square pan and refrigerate overnight.
- Top with whipped cream and additional cherries before serving.
- Serves 8 to 10.
