Ingredients

  • 1 (3 oz.) pkg. strawberry gelatin
  • 1 (20 oz.) can crushed pineapple
  • 1 (24 oz.) container small curd cottage cheese
  • 1/2 pt. whipping cream
  • 20 maraschino cherries, halved

Method

  • In medium saucepan, combine gelatin and pineapple with juice. Heat until all gelatin is dissolved.
  • Set aside.
  • In a large bowl, whip whipping cream with mixer about 2 minutes.
  • Fold in cottage cheese, cherries and gelatin mixture.
  • Place in an 8-inch square pan and refrigerate overnight.
  • Top with whipped cream and additional cherries before serving.
  • Serves 8 to 10.
