Ingredients
- 1 lb. green beans, cut lengthwise
- 2 Tbsp. wine vinegar
- pinch of pepper
- lettuce
- Parmesan cheese, grated
- 4 Tbsp. olive oil
- 1/2 tsp. salt
- 1 onion
- 1 hard-boiled egg, chopped
Method
- Cook beans in boiling salted water for 15 minutes.
- Drain and cool.
- Combine oil, vinegar, onion, salt and pepper.
- Mix with beans.
- Lightly cover and chill.
- Serve heaped on lettuce leaf and sprinkle with egg and cheese.
- Serves 4.
