Ingredients

  • 6 to 8 baking potatoes
  • 1/2 c. butter
  • 3 to 4 Tbsp. chives
  • 3 to 4 Tbsp. minced onion
  • 8 oz. sour cream
  • salt and pepper to taste
  • 1 c. grated cheese
  • bacon crumbs (optional)

Method

  • Wash, oil
  • and
  • wrap
  • potatoes
  • in
  • foil.
  • Bake at 450° until tender.
  • Remove
  • foil
  • and cut out top of potato.
  • Scoop out inside of potato and put in mixer bowl.
  • Cream potato with butter, salt
  • and
  • pepper, then chives, onions and sour cream. Put back into potato shell.
  • Bake at 325° for approximately 25 to 30 minutes.
  • Sprinkle grated cheese and bacon, if desired, on top of potato and let cheese melt.
  • Then serve hot.
