Ingredients
- 6 to 8 baking potatoes
- 1/2 c. butter
- 3 to 4 Tbsp. chives
- 3 to 4 Tbsp. minced onion
- 8 oz. sour cream
- salt and pepper to taste
- 1 c. grated cheese
- bacon crumbs (optional)
Method
- Wash, oil
- and
- wrap
- potatoes
- in
- foil.
- Bake at 450° until tender.
- Remove
- foil
- and cut out top of potato.
- Scoop out inside of potato and put in mixer bowl.
- Cream potato with butter, salt
- and
- pepper, then chives, onions and sour cream. Put back into potato shell.
- Bake at 325° for approximately 25 to 30 minutes.
- Sprinkle grated cheese and bacon, if desired, on top of potato and let cheese melt.
- Then serve hot.
