Ingredients

  • 1 1/2 lb. ground beef or sausage
  • 1 large onion, chopped
  • 1 can Ranch Style beans with juice
  • 1 can whole kernel corn with juice
  • 1 can stewed tomatoes
  • 2 cans Ro-Tel tomatoes
  • 20 flour tortillas
  • 1 lb. Velveeta cheese
  • 1 lb. Cheddar cheese

Method

  • In Dutch oven, brown ground beef or sausage with onion.
  • Drain grease.
  • Pour in beans, corn, stewed tomatoes and one can Ro-Tel tomatoes.
  • Take 20 flour tortillas, broken up, put half in 14 x 10-inch pan.
  • Layer meat, cheeses, tortillas, meat and cheeses. Pour 1 can Ro-Tel tomatoes over top.
  • Let sit for two hours, covered with foil.
  • Bake at 350° for 1 hour, uncovered.
  • Serves 10 to 12.
