Ingredients
- 1/2 c. green pepper, chopped
- 1 c. bias-cut celery
- 1/2 c. onion, chopped
- 1/4 c. cooking oil
- 1/4 c. flour
- 1 1/2 c. tomato juice
- 1/4 c. brown sugar
- 1/2 c. lemon juice and grated rind of 1 lemon
- 1 lb. shrimp, cooked, shelled and deveined
Method
- Saute pepper, celery and onion in oil until tender.
- Sprinkle flour over mixture; stir rapidly to keep smooth.
- Pour tomato juice over mixture; continue stirring until thickened a bit.
- Add sugar, stirring constantly, then lemon juice and rind.
- Reduce heat to warm and add shrimp.
- Let set for an hour or so while flavors blend.
