Ingredients

  • 1/2 c. green pepper, chopped
  • 1 c. bias-cut celery
  • 1/2 c. onion, chopped
  • 1/4 c. cooking oil
  • 1/4 c. flour
  • 1 1/2 c. tomato juice
  • 1/4 c. brown sugar
  • 1/2 c. lemon juice and grated rind of 1 lemon
  • 1 lb. shrimp, cooked, shelled and deveined

Method

  • Saute pepper, celery and onion in oil until tender.
  • Sprinkle flour over mixture; stir rapidly to keep smooth.
  • Pour tomato juice over mixture; continue stirring until thickened a bit.
  • Add sugar, stirring constantly, then lemon juice and rind.
  • Reduce heat to warm and add shrimp.
  • Let set for an hour or so while flavors blend.
