Ingredients

  • 5 cups water
  • 2 1/2 cups sugar
  • 10 black tea bags
  • Pinch baking soda
  • Water, to taste
  • Bourbon, to taste
  • Peach schnapps, to taste
  • Fresh lemon juice, to taste

Method

  • Combine all of the tea ingredients to a large pot over medium heat.
  • The baking soda will darken the syrup and reduce the bitterness.
  • Bring the mixture to a boil stirring to dissolve the sugar and extracting as much tea as possible.
  • Once the mixture is boiling, remove the pot from the heat and let steep until cooled.
  • Remove and discard the tea bags and reserve the sweet tea syrup.
  • In a large container combine the sweet tea syrup and add water, to taste.
  • Add remaining ingredients, bourbon, peach schnapps and lemon juice, also to desired taste.
