Ingredients
- 1 pound firm or extra firm tofu, cubed
- 9 ounces fresh baby spinach or frozen spinach, thawed
- 3 tomatoes, chopped
- 2 tablespoons Dr. Fuhrman's Black Fig Vinegar or lemon juice
- 1/8 teaspoon cayenne
- 1/8 teaspoon onion powder
- 1/2 cup vegetable broth, no-salt-added or low sodium
Method
- Saute all the ingredients in the vegetable broth.
- Cooked or no-salt-added canned beans may be substituted for the tofu.
