Ingredients
- 3 large green peppers, peeled, seeded and chopped
- 2 tomatoes, peeled, seeded, and chopped
- 1 cup snipped fresh parsley
- 3 TBS lemon juice
- 3 TBS EVOO
- 1/2 tsp salt
- 1/2 tsp ground cumin
Method
- combine all ingredients and refrigerate at least 2 hours up to overnight.
