Ingredients

  • 12 ounces ziti or other short pasta
  • 1/2 pound smoked sausage, sliced
  • 1 tablespoon flour
  • 1 cup chicken broth
  • 2 teaspoon Creole seasoning
  • 3 large Italian frying peppers or 1 large green or red bell pepper, thinly sliced (3 cups)
  • 3/4 pound peeled and deveined shrimp
  • 1 cup scallions, sliced

Method

  • Cook pasta according to package; drain.
  • Meanwhile, cook sausage slices in a large skillet over medium-high heat until browned on both sides. Stir in flour and cook 1 minute, stir in broth, Creole seasoning, salt, and peppers. Cook until the peppers are crisp-tender, 2 minutes. Add shrimp and cook 3 minutes or until pink, stirring occasionally. Remove from heat, and stir in scallions.
  • Place hot pasta in four individual serving bowls and top each with shrimp mixture.
