Ingredients

  • 4 to 6 Tbsp. seasoned dry bread crumbs
  • 1 (24 oz.) pkg. frozen shredded potatoes, thawed
  • 1 large onion, peeled and chopped
  • 2 1/2 c. shredded Swiss cheese, divided
  • 4 Tbsp. butter or margarine, melted
  • 1 tsp. Italian seasoning, divided
  • salt and freshly ground pepper to taste
  • 2 Tbsp. olive oil
  • 1 medium zucchini or 2 small yellow crookneck squash, thinly sliced
  • 1/2 lb. fresh mushrooms, sliced
  • 3 medium tomatoes, peeled, seeded, cut into chunks
  • 2 Tbsp. grated Parmesan cheese

Method

  • Generously butter a 10-inch pie plate or quiche dish. Sprinkle bread crumbs on bottom and up the sides of the dish. Shake out excess crumbs; set dish aside.
