- 4 to 6 Tbsp. seasoned dry bread crumbs
- 1 (24 oz.) pkg. frozen shredded potatoes, thawed
- 1 large onion, peeled and chopped
- 2 1/2 c. shredded Swiss cheese, divided
- 4 Tbsp. butter or margarine, melted
- 1 tsp. Italian seasoning, divided
- salt and freshly ground pepper to taste
- 2 Tbsp. olive oil
- 1 medium zucchini or 2 small yellow crookneck squash, thinly sliced
- 1/2 lb. fresh mushrooms, sliced
- 3 medium tomatoes, peeled, seeded, cut into chunks
- 2 Tbsp. grated Parmesan cheese
Method
- Generously butter a 10-inch pie plate or quiche dish. Sprinkle bread crumbs on bottom and up the sides of the dish. Shake out excess crumbs; set dish aside.
