Ingredients

  • None None FOR THE SALSA
  • 3 None tomatoes, finely chopped
  • 1 small red onion, finely chopped
  • 2 tbsp chopped cilantro
  • None None FOR THE GUACAMOLE
  • 2 medium avocados, peeled and pitted
  • 1 tbsp lemon juice
  • 1/2 tsp mild chili powder
  • None None FOR THE TACOS
  • 8 None taco shells
  • 1 can (16 oz) refried beans, heated
  • 2/3 cup grated Cheddar cheese

Method

  • Mix the salsa ingredients in a small bowl. Season generously with salt and freshly ground black pepper. Set aside until required.
  • For the guacamole, mash the avocado with the lemon juice, chili powder, salt and freshly ground black pepper, until almost smooth and creamy. Transfer to a small serving bowl. Cover with plastic wrap and set aside.
  • Fill taco shells with refried beans, salsa, guacamole and grated Cheddar cheese.
