- None None FOR THE SALSA
- 3 None tomatoes, finely chopped
- 1 small red onion, finely chopped
- 2 tbsp chopped cilantro
- None None FOR THE GUACAMOLE
- 2 medium avocados, peeled and pitted
- 1 tbsp lemon juice
- 1/2 tsp mild chili powder
- None None FOR THE TACOS
- 8 None taco shells
- 1 can (16 oz) refried beans, heated
- 2/3 cup grated Cheddar cheese
Method
- Mix the salsa ingredients in a small bowl. Season generously with salt and freshly ground black pepper. Set aside until required.
- For the guacamole, mash the avocado with the lemon juice, chili powder, salt and freshly ground black pepper, until almost smooth and creamy. Transfer to a small serving bowl. Cover with plastic wrap and set aside.
- Fill taco shells with refried beans, salsa, guacamole and grated Cheddar cheese.
