- 2 pounds zucchini sliced
- 1 sweet onion small, chopped
- 1/2 cup chicken broth
- 2 cups cooked rice
- 1 cup sour cream
- 1 cup sharp cheddar cheese shredded
- 1/4 cup Italian seasoned breadcrumbs
- 2 eggs
- salt
- pepper
- 1/4 cup Parmesan cheese
Method
- Combine zucchini, onion and chicken broth in a saucepan and simmer for about 15 minutes until onion and zucchini are tender.
- Combine zucchini mixture with rice, sour cream, cheddar cheese, breadcrumbs, eggs and salt and pepper and mix well.
- Spray a 13 x 9-inch baking pan with cooking spray and place mixture inside.
- Top with Parmesan cheese and bake for 30 - 35 minutes at 350 degrees.
