Ingredients

  • 2 pounds zucchini sliced
  • 1 sweet onion small, chopped
  • 1/2 cup chicken broth
  • 2 cups cooked rice
  • 1 cup sour cream
  • 1 cup sharp cheddar cheese shredded
  • 1/4 cup Italian seasoned breadcrumbs
  • 2 eggs
  • salt
  • pepper
  • 1/4 cup Parmesan cheese

Method

  • Combine zucchini, onion and chicken broth in a saucepan and simmer for about 15 minutes until onion and zucchini are tender.
  • Combine zucchini mixture with rice, sour cream, cheddar cheese, breadcrumbs, eggs and salt and pepper and mix well.
  • Spray a 13 x 9-inch baking pan with cooking spray and place mixture inside.
  • Top with Parmesan cheese and bake for 30 - 35 minutes at 350 degrees.
