Ingredients

  • 3 c. all-purpose flour
  • 3/4 c. sugar
  • 1 c. coarsely chopped walnuts
  • 4 1/2 tsp. double-acting baking powder
  • 1/2 tsp. baking soda
  • 1 1/2 tsp. apple pie spice
  • 1 tsp. salt
  • 4 eggs
  • 1 tsp. vanilla
  • 3/4 c. honey
  • 2/3 c. salad oil
  • 2 c. grated zucchini

Method

  • Preheat oven to 325°.
  • Grease two 8 1/2 x 4 1/2-inch loaf pans.
  • In a large bowl, mix flour, sugar, walnuts, baking powder, baking soda, apple pie spice and salt.
  • In a medium bowl, beat eggs slightly. Stir in honey, salad oil, zucchini and vanilla. Stir liquid mixture into flour mixture just until flour is moistened. Spread equally into loaf pans.
  • Bake 1 hour or until toothpick comes out clean.
  • Cool 10 minutes. Remove from pans. Makes 2 loaves.
