Ingredients
- 1 lb. bulk Italian sausage (sweet or hot; may be half and half)
- 1 1/2 c. shredded zucchini
- 1 c. shredded Swiss cheese
- 1 c. Ricotta or cottage cheese
- 4 eggs, beaten
- 1/2 tsp. salt (optional)
- 1/4 tsp. pepper
- 1 (9-inch) unbaked pie crust
Method
- Brown sausage and drain off fat.
- Press liquid from zucchini between double layers of paper towels.
- Combine all ingredients in a large bowl and mix thoroughly.
- Set aside.
- Preheat oven to 400° and bake pie crust 10 minutes.
- Remove from oven; reduce oven temperature to 375°.
- Pour mixture from bowl into pie crust.
- Bake for 45 to 50 minutes or until knife inserted in center comes clean.
- Let stand for at least 10 minutes before serving.
