Ingredients

  • 1 lb. bulk Italian sausage (sweet or hot; may be half and half)
  • 1 1/2 c. shredded zucchini
  • 1 c. shredded Swiss cheese
  • 1 c. Ricotta or cottage cheese
  • 4 eggs, beaten
  • 1/2 tsp. salt (optional)
  • 1/4 tsp. pepper
  • 1 (9-inch) unbaked pie crust

Method

  • Brown sausage and drain off fat.
  • Press liquid from zucchini between double layers of paper towels.
  • Combine all ingredients in a large bowl and mix thoroughly.
  • Set aside.
  • Preheat oven to 400° and bake pie crust 10 minutes.
  • Remove from oven; reduce oven temperature to 375°.
  • Pour mixture from bowl into pie crust.
  • Bake for 45 to 50 minutes or until knife inserted in center comes clean.
  • Let stand for at least 10 minutes before serving.
