Ingredients

  • 4 egg yolks
  • 3 Tbsp. cold water
  • 1 c. sugar
  • 1 tsp. lemon extract
  • 1 1/2 Tbsp. cornstarch
  • 1 c. flour, sift before measuring
  • 1 1/4 tsp. baking powder
  • 4 egg whites

Method

  • Beat egg yolks; add water and beat until thick and lemon colored.
  • Add sugar slowly and beat well.
  • Add lemon extract. Slowly add sifted flour, cornstarch and baking powder and beat. Then fold in stiffly beaten egg whites and bake in a very slow oven (may be 300° to 325°). If top begins to brown too much, put a piece of brown wrapping paper over it.
