Ingredients
- 4 egg yolks
- 3 Tbsp. cold water
- 1 c. sugar
- 1 tsp. lemon extract
- 1 1/2 Tbsp. cornstarch
- 1 c. flour, sift before measuring
- 1 1/4 tsp. baking powder
- 4 egg whites
Method
- Beat egg yolks; add water and beat until thick and lemon colored.
- Add sugar slowly and beat well.
- Add lemon extract. Slowly add sifted flour, cornstarch and baking powder and beat. Then fold in stiffly beaten egg whites and bake in a very slow oven (may be 300° to 325°). If top begins to brown too much, put a piece of brown wrapping paper over it.
