- 3 None large Pink Lady apples, peeled, cored, thickly sliced
- 2 None large eggs
- 1 cup granulated sugar
- 12 tbsp butter, softened
- 1 3/4 cups self-rising flour
- 2 tbsp custard powder
- 3/4 cup milk
- -1 None Crumble
- 3/4 cup all-purpose flour
- 2/3 cup brown sugar
- 3/4 cup shredded coconut
- 1/2 cup butter, softened
Method
- Preheat oven to 325°F. Grease and line a 9 inch springform pan.
- Place apples in a saucepan with 1/4 cup water. Cover and simmer over low heat for 10 mins, or until just tender. Drain excess liquid and let cool to room temperature.
- In a food processor, combine eggs and sugar. Process for 2 mins, or until light and creamy. Add softened butter and process for 2 mins. Add flour, custard powder and milk and process until just combined. Transfer to prepared pan and spread stewed apples over top.
- To make the crumble, combine all ingredients in a food processor and process until mixture resembles coarse breadcrumbs. Sprinkle over apples. Bake for 1 hour, or until a skewer inserted in the center comes out clean. Let cool for 10 mins before removing from pan.
