Ingredients
- 4 c. all-purpose flour
- 2 Tbsp. baking powder
- 3 Tbsp. brown sugar
- dash of salt
- 2 eggs, slightly beaten
- 2 c. half and half
- 1 c. melted margarine
- 2 apples, unpeeled and grated
- 1 c. chopped apricots
- 1/2 c. bran cereal
Method
- Mix flour, sugar, baking powder and salt.
- In a separate bowl, stir together eggs, half and half and cooled melted margarine. Add apples, apricots and bran cereal to dry ingredients.
- Add egg mixture to dry ingredients.
- Stir only until moistened.
- Do not overmix.
- Batter should be lumpy.
- Fill greased muffin tins about 3/4 full.
- Bake at 375° to 400° for 15 to 20 minutes, until lightly browned.
- Serve hot from oven.
