Ingredients

  • 4 c. all-purpose flour
  • 2 Tbsp. baking powder
  • 3 Tbsp. brown sugar
  • dash of salt
  • 2 eggs, slightly beaten
  • 2 c. half and half
  • 1 c. melted margarine
  • 2 apples, unpeeled and grated
  • 1 c. chopped apricots
  • 1/2 c. bran cereal

Method

  • Mix flour, sugar, baking powder and salt.
  • In a separate bowl, stir together eggs, half and half and cooled melted margarine. Add apples, apricots and bran cereal to dry ingredients.
  • Add egg mixture to dry ingredients.
  • Stir only until moistened.
  • Do not overmix.
  • Batter should be lumpy.
  • Fill greased muffin tins about 3/4 full.
  • Bake at 375° to 400° for 15 to 20 minutes, until lightly browned.
  • Serve hot from oven.
