Ingredients

  • 2 tsp Gelatin
  • 1 c. Sugar
  • 2 c. Apricot nectar
  • 2 Tbsp. Orange juice
  • 2 tsp Lemon peel -- grated

Method

  • 1.
  • Sprinkle gelatin into 1/4 c. cool water.
  • Let stand 5-10 min to soften.
  • 2.
  • Put softened gelatin into 1-1/2 c. VERY warm water.
  • Stir till gelatin is completely dissolved.
  • Add in 1 c. sugar and stir till sugar is dissolved.
  • 3.
  • Blend 2 c. apricot nectar, 2 Tbsp.
  • orange juice and 2 tsp.
  • grated lemon peel into the gelatin mix.
  • Cold, then pour into a refrigerator tray.
  • 4.
  • Place in freezer and freeze till hard.
  • This should take about 4 hrs.
  • Serve in chilled sherbet glasses.
  • Yield: about 1 qt.
