Ingredients

  • 1 13 cups whole wheat all-purpose flour
  • 12 teaspoon salt
  • 12 teaspoon cinnamon
  • 1 egg
  • 1 tablespoon honey
  • 1 cup low-fat milk
  • 1 tablespoon applesauce
  • 1 medium apple, peeled, sliced thinly, and cut into bite-sized pieces
  • chopped walnuts (optional)
  • confectioners' sugar (optional)

Method

  • In a bowl, blend the flour, salt and cinnamon together.
  • In a separate bowl, whisk the egg.
  • Add honey, milk and applesauce.
  • Add to dry ingredients and mix until incorporated.
  • Fold in apples and walnuts (optional).
  • Pour by 1/2-cupfuls onto a lightly greased hot griddle, then spread into large circles.
  • Flip pancakes when bubbles form.
  • Cook until golden brown and apples are tender.
  • Top with remaining applesauce and a sprinkle of confectioners sugar.
