Ingredients

  • 2 tbsp vegetable or olive oil
  • 1 lb meatballs
  • 1 None medium Spanish onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tsp ground turmeric
  • 1 tbsp ground cumin
  • 4 None cardamom pods, bruised
  • 2 (16 oz) packets microwave basmati rice
  • 1/2 cup chicken stock
  • 9 oz frozen mixed vegetables
  • 1/2 cup chopped fresh cilantro leaves
  • 1/3 cup plain yogurt, to serve

Method

  • Heat 1 tbsp oil in a large frying pan over medium heat. Cook meatballs, turning, for 3-4 mins, or until browned. Remove from pan.
  • Add remaining oil to pan. Cook onion, garlic and spices for 1-2 mins, or until fragrant. Add rice, stock, vegetables and meatballs. Simmer, uncovered, for 5-6 mins, or until stock is almost absorbed and meatballs are cooked through. Stir in cilantro. Serve with yogurt.
